Hare backstrap
Never made Hare before, but we shot two on sunday, and I cut off the backstraps, and made my speciel marinade.....
Two days in the marinade, cut in small pieces and put bacon around them.
It was so good, tender and the taste was amazing.
Ready for the pan....
Almost ready.....
Hope to get a few more on sunday, we have a small hunt on the fields.

Great stuff Olsen, could easily have that as nibbles watching a game or combined with a side as a main. Hare really is underrated and calling it poor mans venison is underserving.
My favourite hare dish is a version of an Italian dish in which you marinate the quartered hare overnight in red wine and make a ragout from it.

I have eaten a lot of their domesticated cousins. Love rabbit/European hare. My grandmother raised a bunch of them. She would take the old ones, grind up into rabbit burger, and make the best spaghetti a kid could eat.

I'm a fan of hare, it was my favorite meat as a kid.
