Fallow Wellington

I shot a couple of fallow last week and my work colleague has been bugging me for me venison. So I made sure he got some choice cuts. Here is the result and the pictures speak for themselves.

That looks delicious but unfortunately, the internet is not good for tasting. On faith I bet it was delicious.

That looks magnificent. Very keen to try a Victorian Fallow. A colleague recently described how much he enjoyed the Victorian Fallow compared to Tasmanian deer. Tassie Fallow has a strong game falavour that some folks find hard to like.

I eat it all the time, get younger yearling and its almost sweet where I get them.
Lots of green pick grass and spring water to drink.

Yep good feed and water make sure all the difference. Some of our highland Fallow have a tough time with food and it shows in their meat.

The ones around the pine forests eat a lot of sweet green feed, and the hills arent as steep.
Makes for some nice sweet meat.

Well he said he seasoned it first with salt and pepper. Then coated it with pine nuts and sliced champions. Then wrapped it in the puff pastry. When I've done it, I've covered in goose liver pate before adding the mushrooms. But it worked a treat anyway.

Well it sounds and looks delicious and foie gras would be a must, at least IMO.
