Pine mushrooms
Took a little time out from work at home and went mushrooming this morning. Wasn’t a great number , would have preferred to go for a shot.
picked only safron milk caps .
Any suggestions for a good recipe ?

Re: Pine mushrooms
Good work. We just fry them. Seen a heap of field mushrooms today but was too busy hunting to stop.

Re: Pine mushrooms
I just cooked some up for dinner tonight.
Pine Mushroom Pasta
Dice an onion and a few cloves of Garlic and cook in a mix of butter and olive oil till translucent. I use a nice deep cast iron frying pan. I had some leftover bacon fat for breakfast I used this time instead of oil/butter. Pick a small handful of fresh herbs. I had sage and parsley in the garden. Chop fine and add to pan with onions and garlic. At the same time add your mushrooms. I cut them in thin strips across the diameter. I used about 6. Sauté for abut 5 minutes. Mushrooms should suck up all the oil and butter. Add a generous glug of white wine to the pan and cook the alcohol off (a couple of minutes). Once it gets thicker turn the heat off and add a generous handful of grated parmesan and a glug of cream. Give it a quick stir and your done. I mixed it through with a bit of pappardelle pasta. Makes enough for two regular serves or in my case one serve for a hungry person...
They are also good just sautéed in butter with sage for breakfast. Great side with Poached eggs and streaky bacon.
Enjoy!

Re: Pine mushrooms
That must be the first time someone went hunting for edible mushrooms in a pine forrest.
I'm soft and I don't care.

Good one Steve. I planned to go get some today but my son drowned my Landcruiser in the biggest boghole in Wombat on Saturday morning. Spent the whole day pulling everything out of the Cruiser inluding the carpets....Just an empty shell now.....mud was everywhere....

Re: Pine mushrooms
Lol. I just want to cry..... the relay that drives the parkers, tail lights and the instrument cluster lights is cactus and it lives in the back of the left hand kick panel junction/fuse box of the Cruiser. Had to take out the front seats, centre console, glove box, covers of front pillars, steering wheel, instrument cluster, whole front dash, crash bar, and the entire blower fan assembly to get to the fuzzy bunny. Wanted to change all the relays and one is on order from Japan - 3 weeks..... I do want to cry....Car is still in pieces....
