Speedy, do you age your rum in a timber vat/keg, or do you add flavoring ?

Told you you would have problems obtaining 45's ;) Went down that path when I was in the business of filling barrels with body parts in the name of science, 30L and 60L were the easiest to get and 60 was about the biggest you'd want to haul about in the field :lol:

How well does the top seal go on the water tank? And did you buy a trolley from SuperCheap auto in the same trip?

I'm also keen to know what you're paying down there for cracked or whole corn, I'm going through about ten 20 kg bags a month at present with hungry animals :whistle:

I make traditional, it's always green, rested at most and should be white.
It's not Bundy style rum, more unspiced (sort of) white rum.
I've got a secret couple of ingredients that I leave out, but it's got good smooth flavor with a good short burn and no lingering after burn.

The seal is loose but im packing with round rubber auto door seal, it won't be an issue with a little duck tape, that's what it was made for.
The CO2 will always head for the path of least resistance and that's the oxygen trap.
Traditional moonshine is just fermented in buckets/drums with no lid and just a cloth covering to keep the dirt out. But if you leave it too long after it's ready it goes to vinegar, I like to rest it for 3 days or do after it done to let's the yeast settle and clarify.
I got the corn for $5 a bag, I didn't need much, if I start running more then I will buy a 20kg bag of whole and a couple 20kg bags of cracked, their about $15 a bag, much cheaper but for my 1st run I bought the broken down backyard chicken feed bags.

We're up to $18 per bag here, was $13 not so long ago :(

Nope, but I'm chasing rye to blend it with.

If I can't find any then I might try with wheat, it's cheap and easily found.
Just sprout it and then smoke it slow and cold till dry and then grind it up for a nice smokey malt finish.

Try your local hippy wholefoods http://www.wrayorganic.com.au/ I can get it down the road from an organic cafe & store but the price should be better from somewhere without the obsession with organic certification

I'm leaning towards the wheat it worked for old Pappy Van Winkle, but I can check it out.
Then again come to think of it I've got some in the cupboard left over from making soup. :dance:

I'm converting the thumper and worm on the cruuent set up and I'm converting the the new boiler on to it, I picked up 2 x 40lt and 2 x 20lt fermenters and a tone of other stuff including a 20lt mash strainer on gumtree and I figured if I got the 58lt boiler then I can do any if them in one run.
I was going to go all out and get an 88lt boiler but if I only put 20lt in it then odds are I'm going to cause a vacume pressure blockage in the system.

But I have started ageing both my run and corn whisky in 8lt glass containers with charred Tasmanian white oak.
Getting a nice deep dark colour and the flavor is smoothing out, I'm going to turn a 60lt drum into an ageing barrel with some 2ft long oak boards.
Or I might turn the 100lt tank into one, either way it's going to be a lot of aged grog.

Two for sale cheap near me, very neew to, but I don't have space for a 200lt barrel and believe me I've looked.
