Saw these videos earlier tonight that were made by the Alabama Cooperative Extension System,the Auburn University School of Forestry and Wildlife Sciences, the State of Alabama Fisheries and Wildlife Service and the USDA.
The one big thing that jumped out at me was how he cut the quarters and backstrap off using a knife that he pulled through the skin and through the edible meat. He definitely made short work of the one via the tailgate method. Other than losing out on the ribs and tenderloins I thought that was a slick way to get it done.
