I've been thinking of getting myself a smoker for years but there has always been something else to buy. Be fun to hear how you go - I'm guessing it is a smoker....

Yep, it is a smoker. Got it heated to burn off the factory chems. Butterflied a chicken, rubbed it with chuckies favorite seasoning, and set it for four hours. Dumped two bottles of beer I did not care for in the water vat. Most of the recipes I have seen called for apple juice. Will try that next time.

Muriatic acid seems to be a pretty stout cleaner. Mix it with Lacquer remover and you've got a cleaning agent that requires little elbow grease. OK, actually I haven't done that but wondered if it would blow up, burn, smoke or what it would do. Maybe Speedy will give it a try and let us know how good it works.
A few years back we had a barbeque restaurant open in San Antonio that used smokers like that. It was delicious and rivalled anything cooked in any other pit/smoker, etc. He turned out a fair amount of meat with just 2 of them. No doubt that they work and work well.

Seen quite a few that were made out of old refrigerators or freezers. If you get it set up right they'll work just fine.

That's looks awesome. I've always wanted one but have never got around to it. I'll just keep playing with my spit for now. I know Aldi have one every now and then that's meant to be ok. Look forward to see what you smoke up Corjack.
