Sambar Jerky

Been playing around making jerky over the last few weeks, mostly with beef. But I had a crack at Sambar over the weekend and it looks like it’s come up very nice. I tried the cracked pepper and garlic as the seasoning. I let it sit in the fridge in a cryovac bag for about 17hrs then in the dehydrator for just over 6hr.

Looks good, how does it taste?

I do the same, experiment with beef before committing precious game meat.

Looks good mate. Probably a bit softer than my biltong, so not as hard on the teeth.

I'm not sure I'd like Sambar jerky, its a bit powerful so you would need a lot of flavor to hide the strong game flavor.
I'm soft and I don't care. :dance:

Well I just tried it and I think I better hide it. Not bad at all. I’ll try Fallow deer next .

Too Right Bob. I’ve been playing with seasonings 1st. Now I’ll try some marinades , I have a few ideas but I’ll try on beef 1st. It’s simple to make just a little prep time that’s all. Oh and I recommend a dehydrator as well.
