Videos - field dressing and butchering wild hog

Post by thechamp »

Lots of members here are avid hunters of boar and feral hogs. I've had quite a few hunters in this area tell me the do's and don'ts of field dressing and butchering a wild hog. They all vary with some good ideas/suggestions mixed in with each. The one constant I've been told is to be sure to wear gloves since hogs carry Brucellosis and it is contagious to people. The other is to not let the skin touch the meat. One friend takes his to a local car wash and gives them a thorough bath washing all the 'stink' and other dirt off of them before even gutting them.

Saw these videos earlier tonight that were made by the Alabama Cooperative Extension System, the Auburn University School of Forestry and Wildlife Sciences, the State of Alabama Fisheries and Wildlife Service and the USDA.

The one big thing that jumped out at me was how he cut the quarters and backstrap off using a knife that he pulled through the skin and through the edible meat. He definitely made short work of the one via the tailgate method.  Other than losing out on the ribs and tenderloins I thought that was a slick way to get it done.
