Sausages are hard work.

After trimming down a heap of doe meat I spent the night making sausages.
Very simple recipe, the ratio goes as follows.

8kg of diced venison
2kg of beef fat (I get it free from my local butcher)
4 table spoons of pink salt
2 table spoons of ginger powder
2 table spoons of garlic powder
2 table spoons of turmeric

Run through the mincer and into skins, twist to size and leave in the fridge overnight to set.
