Massaman Curry- sambar

Have been progressively emptying the game meat fridge over the summer. For tonight’s instalment, may I present

Sambar Massaman Curry. For those in Oz, I used the Curry Traders kit. It has all the raw spice ingredients so be prepared to do some grinding but well worth the effort. Cooked in a slow cooker, kept in fridge for two days then heated with a sous vide bag. Very tender sambar morsels! Served up with some rice and flat bread.

It's always hard to find curry stuff that isn't all heat and no flavour.
